Cuisines of Rajasthan

Journey to Rajasthan is incomplete without tasting the mouth watering dishes of every region of Rajasthan. As the history of Rajasthan has its own glimpses so is its food which attracts every one towards it on first sight. Due to dry and arid region need for a food which can be kept safe for several days and which required less heating was felt. The meals in the deserted area of Jaisalmer, Barmer and Bikaner are made by milk, buttermilk and clarified butter rather then with the use of water, which is generally used in cooking.

Below is the brief about some of the delicious dishes which have mark their identity as the recognition of Rajasthani cuisines and every visitors wishes to test them when he visit to Rajasthan.

Rajasthani Dal-Bati-Churma:

It is the famous dish of Rajasthan which has got recognition even from the foreign visitors. Dal is made of dried pulses, bati are the roasted balls of wheat flour cooked on the ashes of cow dung and soaked in Ghee, where as Churma is a kind of sweet served along with dal and bati. The combination of three makes a delicious dish to eat.

Ker-Sangri on Bajara Roti:
Ker sangri is a kind of vegetable made by beans of dry land plants like Sangri and ker. Gram flour is the main ingredient used to prepare some of the delicious dishes like khata, gatta ki sabzi, pakodi. The ker sangri vegetable is served with the cooked bread of Bajra soaked with ghee. The Rajasthani daily food has a cooked  wheat bread known as Chapati or Roti, served with vegetables.

Flying Puris: Is a kind of bread in a bubble shape. Deep fried in ghee or edible oil puri is also served with vegetable but can be used in different ways such snacks, and as a complement to hot spices.

Lassi: Also known as ancient cold drink since the time of Lord Krishna. Lassi occupies an important place in Indian households. Made by curd lassi serves as a summer drink and refreshes the person with cool feelings.

Despite of this, Rajasthan offers a variety of food items to the tourists. Most of the people in the state are vegetarian and they prefer to take meals made from vegetables and ghee.

Rajasthan is specially popular for its variety of sweet delicacies. Different places of Rajasthan have their own renounce for a particular item. The bundi Ladoos, gulab jamuns, mawe ki kachori, chakki etc from Jodhpur, Malpuas from Pushkar, Jalebies from most big cities, Rasogullas from Bikaner, Dil Jani from Udaipur, Mishri Mawa and Ghevar from Jaipur, Sohan Halwa from Ajmer and Mawa from Alwar are the famous food items which give attractive flavor to the tourists.
